From sea to land

The post-fishing steps have been taking place for hundreds of years in the onshore plant.

After being caught, the tuna was placed in the shade on reed mats for drying, later put in 10kg cans and then cooked in sets of huge pots. Some of the machinery, dating back to various eras, from cookware to autoclaves, can still be seen in our plant, bearing witness to the ancient tradition.

  • 1654

    In 1654 the King of Spain entrusted the management of all the tuna fisheries in Sardinia to the banker Gerolamo Vivaldi, who had largely financed the Spanish treasury, which at the time were the property of the Royal Crown.

  • 1671

    In 1671 King Philip IV sanctioned the sale of the tuna fisheries to Gerolamo Vivaldi, who established a tuna processing plant in Portoscuso. The tuna was salted and stored in wooden barrels and then sold.

  • 1890

    After the Unification of Italy, the then-owner Pasquale Pastorino built a new complex on the island of San Pietro: a healthier canning plant than the previous one which had to close due to malaria.

  • 1960

    In recent history, much is owed to lawyer Salvatore Greco: a protagonist in recent years of the survival of the "tonnara fissa", the tuna fishing nets system, and consistently at the forefront of environmental battles in defence of the ecosystem.

  • 1990

    Salvatore Greco, along with his sons Giuliano, Pierpaolo and Andrea, are working together today to ensure continuity and future for this ancient tradition of immeasurable economic-social importance for the economy of the territories where it takes place.

The girotonno

Carloforte Tonnare is among the promoters of Girotonno, an international event of scientific and gastronomic interest that includes performances and competitions among chefs and which attracts tens of thousands of tourists each year. Carloforte Tonnare participates by providing the raw material which is then reworked by the chefs into the most imaginative dishes.

The ancestors of the Greco family have always been capable of understanding market needs while offering the best possible product. This continues to be the goal of Salvatore Greco and sons Giuliano, Pierpaolo and Andrea. The outcome is a system that is the result of an extensive family experience: even today, they are the only ones that manage a complete supply chain that goes from tuna fishing to transformation into preserves in oil, right up to sales.
