These are cuts from Thunnus thynnus caught during their seasonal run — when the tuna swim to the warm Mediterranean waters to spawn. This natural cycle ensures their meat is in optimal condition for consumption. The cuts come from the sub-dorsal flesh, which is lean and has a bold, distinctive flavor.
