Briciole are the smallest pieces resulting from the knife-cutting of Bluefin Tuna steaks and are excellent for pâtés, appetizers, salads and especially pasta sauces.
- Ingredients: Bluefin tuna (Thunnus thynnus), olive oil, sea salt.

Spaghetti sauce: heat olive oil in a pan with chopped garlic, add a teaspoon of vinegar and then a stock cube to be dissolved with half a glass of white wine. Add a tablespoon of tomato paste and the contents of a box of Briciole; stop cooking and keep warm. Cook spaghetti in lightly salted water and once drained, stir it in the pan, adding chopped parsley and a bit of chilli pepper. Carloforte Briciole are also perfect for veal with tuna sauce, which is made by blending the contents of one package with two anchovy fillets, a handful of capers, a couple of pickled cucumbers and olive oil to make it creamier.
